Melly,
The biggest thing would likely be hydration. A full day of flying, even if you are drinking water, just seems to suck the water out of your body. (At least that's how I feel!) I'm not sure what her risk of infection would be, but I think most docs would be surprised at the number and variety of germs we're exposed to. She'll be hopping from climate to climate, to different regions or countries with germs that she's never had exposure to (and eating the food/drinking the water), interacting in close quarters with people from all over the world who might have germs that her body's never seen.
A family member of mine recently donated a kidney, and the only restriction that I know of for her was no contact sports. :-) Your friend should talk to her doctor, and make sure that he/she really understands the rigors of the job - because most of them don't have a clue.
